What isn't mentioned is that Huy Fong Foods decided to hold out on their pepper supplier to try to get a cheaper rate, culminating in ruining a 30-year partnership. [They got sued and lost](https://www.nbcnews.com/news/asian-america/sriracha-maker-huy-fong-ordered-pay-millions-damages-chili-pepper-n1027616). Now they have to use peppers from other suppliers, changing the taste profile of Sriracha. The [original supplier](https://underwoodranches.com/) of the peppers now sells their own Sriracha that is supposed to taste like the original.
